spinach, bacon, pumpkin & fetta spaghetti

Another ‘at home for lunch’ tossed together meal. And these ingredients are, like, BFF. What more can I say? Make this and be happy!

Spinach, bacon, pumpkin & fetta spaghetti (do you need me to say that one more time?)

Boil water, chuck in spaghetti. In a pan start frying off roughly chopped bacon in some olive oil, add crushed garlic (and I mean smashed with a knife and roughly chopped, I never bother with a garlic crusher), chunks of pumpkin and cook till pumpkin is soft.. should ready be about when pasta is done. drain pasta, add pumpkin/bacon, and stir through well-rinsed chopped spinach (if substituting silverbeet, add to pan to cook with pumpkin/bacon, because it is a bit tougher than English spinach) and then gently again with cubes of fetta (I like soft styles like Danish). May need an extra glug of olive oil, definitely some cracked pepper!
